This salad goes against the status-quo. It not bland or dull, it is filled with color and flavor.
Here is one of my go-to lunch and even dinner recipe I love to make. There are two main reasons why I love making quinoa. One, quinoa is versatile that you can make the quinoa savory or sweet. Second, it is the simplest recipe to make when you do not know what to eat. Those two reasons alone are the only reasons you need to make this your favorite as well. Now, lets get to the recipe.
Serving: 1 person
- 1/2 cup Quinoa
- 1 Tomato
- Handful Parsley
- 1 Avocado
- 1/4 Red Onion
- 7-8 Black Olives
- 2 Limes
- Salt & Pepper
- 1 tablespoon Chili Powder
- 1/2 Bell Pepper (Green, Purple, Red, Yellow, and/or Orange)
1. Cook 1 cup of quinoa in a pot along with 2 cups water over medium-low heat. Cook for 20 minutes or until quinoa consumes all the water. Fluff with a fork when done cooking. Set aside.
2. Dice the bell pepper, tomato, avocado, red onion, black olives, and thinly chop the parsley. Place all in a bowl along with 1/2 cup of quinoa. Just as a reminder, you will have extra quinoa leftover to store in the fridge for your next meal. Squeeze limes into the bowl and season with salt, chili powder, and pepper to your liking. Mix all together. You are done.
