Veggie Gyro

Ingredients:

  • 1 Whole Wheat Pita
  • 1/4 White Onion
  • Handful of Spinach
  • 1/2 Yellow Bell Pepper
  • 1/2 Red Bell Pepper
  • 1 Garlic Clove
  • 1 Tablespoon Grape Seed Oil
  • Salt & Pepper to taste

Guacamole Ingredients:

  • 1/2 Guacamole
  • Jalapeño Juice (Comes in a can mixed with carrots & jalapeños)
  • 1/2 Tomato

Instructions:

1. First, make the guacamole. Mash the avocado with a fork, add diced tomato and season with jalapeño juice, salt, & pepper. Place in refrigerator until needed.

2. In a pan over medium heat, pour the grape seed oil and when the oil has heated, cook garlic clove and diced onion until onion becomes translucent. Season with salt & pepper.

3. Add diced bell peppers, cook for about 2 min and add diced button mushrooms. When mushrooms cook, add the spinach last, cook until spinach wilts down. The spinach wilts in about 1-2 minutes. Set aside.

4. Heat the pita.

5. Begin to layer your filling. I first layered the guacamole then I added the veggie mixture. Wrap like a gyro, you are done.
